Capolina Perlingieri’s organic vineyards are in Solapaca, near Monte Taburno. They are comprised of stony clay volcanic soils, and they grow the lesser known Benevento variety of Falanghina , which is prized for its acidity. The resulting wine is perfect for this month’s uovo da raviolo with asparagus ragù, with citrusy verve, stony minerality and laser focus.
